Interview with Benjamin Magyar, General Manager of Tati, about Our New Wine List
At Tati, beyond our focus on seasonal ingredients and sustainability, a special passion also shines through: a deep love for natural and organic wines. We sat down to discuss this with Benjamin Magyar, Tati’s general manager, who is not only a key figure thanks to his 12 years of experience in hospitality but also for his outstanding wine expertise. Benjamin is the mastermind behind Tati’s wine and champagne selection, with a mission to help every guest find a wine that truly speaks to them.
Is there a wine on the new list you would highlight as a real rarity?
Right now, the Egly Furmint is one of our most exciting offerings. It’s the flagship wine of Márk Egly from Sümeg, and I consider it a true gem among Hungarian natural white wines. Very few bottles were produced, making it a rare find in the gastronomy scene — we’re proud to offer it at Tati.
How did you collaborate with the kitchen in creating wine and food pairings?
We work very closely with our chef, Gábor Soóky. For the tasting menus, we always taste the wines together, and luckily we share a very similar way of thinking, which makes the process fast and efficient. Our goal is to use the wines to highlight and support the flavors in each dish and to find perfect harmony between the two.
Which wine would you personally choose to enjoy on a summer evening on Tati’s terrace, and what dish would you pair it with?
In summer, my partner and I often drink the Turay Generosa, Rozália cuvée, so that’s currently close to my heart. My favorite pairing at the moment is our vegan creamed zucchini with the Jakab Kéknyelű.
What would you recommend to someone who is just starting to explore natural wines but is looking for something special?
The most important thing: taste boldly! The world of natural wines is incredibly exciting, and it’s worth diving in even if you’re not a wine expert. In the end, only one thing matters: whether you enjoy it or not. At Tati, you’re guaranteed to find a wine that speaks to you. We love to guide our guests, ask questions, have conversations, and make recommendations — there’s no need to worry if you’re not a connoisseur.
