1. Cabbage Strudel

A classic Hungarian strudel reimagined by Gábor Soóky into a vegan version. We serve fresh cabbage from Falusi Kosár in an egg-free pastry. The strudel is garnished with smooth vegan horseradish foam and caramelized onions, while Bedrock Farm’s micro mustard coral completes the harmony of flavors.

2. Seasonal Vegan Soup – Cold White Tomato Soup

Made from Szöjpkő Manufactory’s tomato water, this refreshing cold white tomato soup is enriched with vegan cream for a velvety texture. Topped with cucumber marinated in balsamic vinegar and rose jam, as well as our farm’s own sun-dried cherry tomatoes and crispy rice chips made from Valoryz rice. This dish is both vegan and gluten-free.

3. Pumpkin Stew

Our velouté-style pumpkin stew is made without any thickening agents, featuring buttercup squash sautéed with shallots, balanced with vegan cream and tomato vinegar. The dish is garnished with crispy pumpkin cubes and vegetable fritters made with potatoes, zucchini, and mushrooms. Completely gluten-free, this dish is a seasonal favorite!

4. Stuffed Peppers

We serve our vegan stuffed pepper in a pepper velouté sauce, accompanied by Valoryz rice, zucchini, and zakuska. The vegetable patty is rolled in oat flour, making it crispy on the outside while remaining soft inside. When serving, we cover it with roasted pepper and add crispy roasted baby potatoes on the side.

5. Walnut Dumplings

The perfect conclusion to our tasting menu is a classic potato-based dumpling made with almond flour and flaxseeds, making it entirely gluten-free. It’s topped with seasonal jam and caramelized walnut crumbs, finished with vegan whipped cream and garnished with fresh micro basil from Bedrock Farm.
