What is composting? It’s a simple yet effective way to contribute to our environment. In recent years, there has been increasing attention on managing food waste and sustainable agriculture. But what can restaurants do to contribute to the solution? The answer lies in sustainable practices.

Composting isn’t just an effective way for reducing food waste; it’s also beneficial for farmland. At Tati, a farm-to-table restaurant, we do just that – we send kitchen scraps back to our family farm where we compost them, and later use them to enrich the soil for the vegetables and fruits we grow. This simple and sustainable practice helps us reduce kitchen waste while enriching our farm’s soil with nutrients.

But why compost? Besides reducing waste, which helps alleviate pressure on landfills and reduces methane emissions, composting produces valuable soil amendments from organic waste, enhancing soil fertility and promoting healthy plant growth. Moreover, composting helps preserve our natural resources by reducing the use of chemicals and fertilizers in agriculture.
