With our TATI Origins series, we bring the flavours of Hungary’s diverse regions to the table month by month, and this April, we turn towards something sweet.
This time, Transcarpathia takes centre stage, where an iconic dessert passed down through generations, bobajka inspired our latest creation.
Bobajka, a sweet imprint of the past
Bobajka, known to many in Hungary as poppy seed bread pudding, is far more than a classic dessert.
It is a dish deeply woven into family traditions, festive tables, and the rhythm of countryside life. In Transcarpathia, its preparation is still passed down from generation to generation, preserving both its simplicity and meaning.

The dish is built on three essential elements: brioche, poppy seeds, and honey.
Each of these ingredients carries symbolic meaning, representing abundance, fertility, and prosperity. Their strength lies in their simplicity: clean, refined flavours with a lasting depth.
Flavours, reimagined
In the TATI kitchen, we reinterpret this tradition with respect and a contemporary perspective.
Our house-made poppy seed brioche is toasted in butter and powdered sugar until golden, gently caramelising its surface. It is then soaked in sweetened milk, finished with a layer of fresh poppy seeds, and returned to the oven to deepen its texture.
On the plate, a light and airy poppy foam creates the base, topped with crisp brioche and complemented by a silky vanilla cream. The dish is finished with honey, a final touch of poppy seeds, and a piece of honey as a delicate garnish.
Tradition and memory on a plate
This dessert goes beyond flavour. It carries an experience many can relate to – family gatherings, childhood memories, the atmosphere of celebrations.
Bobajka brings the past into the present, placing it in a new context.
The creation of this dish is closely tied to Attila, our sous chef, for whom bobajka evokes the flavours of childhood. For him, it is not only a traditional dish, but a personal memory that reflects the feeling of home and shared moments.

Outside the kitchen, Attila enjoys spending time with his family, travelling, and following football, both on and off the pitch.
In the kitchen, butter is one of his favourite ingredients, valued for its richness and versatility – qualities that also shape this dish.
