Where the Memories Begin

This June, we brought the flavours of Hajdúság to TATI, where mutton stew has long been a defining dish of shared meals and outdoor cooking. The region’s shepherding traditions have been closely tied to sheep farming for centuries, making lamb and mutton a natural part of the local culinary culture.

The Hajdúság version is known for its slow cooking, rich onion and paprika base, and the distinctive character of the meat. Even today, it remains one of the most respected dishes of rural Hungarian gastronomy, preserving both the heritage of shepherd culture and the region’s culinary traditions.

A Dish That Feels Like Home

This chapter is connected to Panni, who comes from Hajdúság. For her, lamb stew is much more than a dish, it is a collection of childhood memories. Family weekends, long afternoons spent in the garden, animals nearby, and relatives gathered around a bubbling cauldron all come to mind whenever she thinks of it.

Even today, stepping away from the noise of the city and returning to these moments is what helps her recharge. That is why it was so special for her to prepare this dish at Angelfish Farm, where the closeness of nature and the atmosphere of cooking together brought those memories back to life.

Every chapter of TATI Origins begins with a personal story, and this one was no different. Angelfish Farm proved to be the perfect setting to recreate the spirit of the dish. The animals, the peaceful surroundings, and the experience of cooking together created something that went far beyond the food itself.

Head Chef Gábor Soóky’s interpretation brought not only the flavours but also these emotions to life. The result is a dish that honours tradition while reflecting the contemporary philosophy of TATI.

TATI’s Mutton Stew

The foundation of the dish is Eco Meat lamb shank, slowly cooked for seven hours with red wine and the classic vegetables of a traditional Hungarian stew.

Key ingredients include:

  • Eco Meat lamb shank
  • Sweet red peppers from Falusi Kosár
  • Smoked paprika from Fajszi Paprika Manufaktúra
  • Sour cream from Csengő Manufaktúra
  • Fresh chives from Angelfish Farm
  • House-pickled wild garlic buds

The traditional side dish is reimagined as egg dumplings, finished with dehydrated egg yolk and seasonal garnishes. The result is a dish that preserves the essence of Hajdúság’s traditional mutton stew while expressing the contemporary approach of the TATI kitchen.
